Simple Chow Mein recipe

Chow Mein is what we normally known as stir-fried noodles with vegetables. It is a classic recipe from the Chinese cuisine that you have probably eaten more than once. The recipe it is quite simple and it admits many different variations, like adding different vegetables, doing a different sauce… 

This is the recipe that we normally do, but feel free to replace the vegetables for other, or even do the sauce your own way! The end goal here is to make a dish with stir-fried noodles and vegetables.

Simple Chow Mein

In this recipe we are going to learn how to do stir-fried noodles with vegetables, a dish that you can find in any Chinese restaurant, known by the name of Chow Mein. It is a very simple recipe, which principal ingredients are vegetables, noodles and soy sauce. It's a nice recipe to start knowing the Asian Cuisine!

Ingredients
  

Sauce

  • 1 tbsp of dark soy sauce
  • 1 tbsp of light soy sauce
  • 1 tbsp of oyster sauce
  • 1 tbsp of sesame oil
  • 1 tsp of sugar

Dish

  • 2 small peppers
  • 2 small onions
  • 2 garlic's cloves
  • 2 pak choi
  • 80 g of wheet noodles (with or without egg)

Instructions
 

Preparing the sauce

  • In a bowl mix:
    – 1 tablespoon of dark soy sauce.
    – 1 tablespoon of light soy sauce.
    – 1 tablespoon of oyster sauce.
    – 1 tablespoon of sesame oil.
    – 1 teaspoon of sugar.
    Set aside for later.

Preparing the dish

  • Slice the peppers.
    Cortar pimientos
  • Slice the onions.
    Cortar cebolla
  • Finely chop the garlic.

  • Cut the pak choi, including leaves and body.

  • Add all the vegetables in a pan at medium heat, with some oil.
    The vegetables need to be cooked for at least 10 minutes, until they are soft and tender.
    Cocinar Verduras
  • While the vegetables are in the pan, cook the noodles according to the instructions, then drain and set aside.
    It is ok if they get cold, as we’re going to fry them next.
    Cocer fideos
  • Once the vegetables are soft and tender (about 10 minutes), add the noodles and put it at high heat.
    Mix everything together trying not to break the noodles.
    Anadir fideos
  • Add the sauce to the pan.

  • We are looking to lightly brown the noodles so they get a little bit crunchy.
    The key is to have the pan on high heat and not touch the noodles for a few seconds, that way the layer that is in contact with the pan will get crunchy. Then mix the content of the pan trying to put new noodles on the bottom and repeat the process a few times.
    Remover ingredientes
  • And that’s it! The dish is ready to be eaten!
    You can garnish your dish with some chopped green onions, some toasted sesame seeds top.

Notes

  • The recipe admits tons of variations: you can add some chicken, scramble eggs, add different types of vegetables… be creative!
  • When serving, you can add some sesame oil on top, it will give the dish a really nice aroma.
