Simple Cauliflower rice
Cauliflower is loved by a lot of people, but hated by many too. This cauliflower rice is the most versatile recipe, able to convince the stronger haters. With the crunchiest texture, it is a great alternative to rice and on top of that, an amazing way of making the most out of leftover vegetables, since it allows tons of variations.

Cauliflower rice
This is a cauliflower rice recipe with clear Asian influences, thanks to the use of soy sauce and sesame seeds. The most important element to keep in mind is to ensure that we minimise the amount of moisture the cauliflower retains to ensure a crunchy texture. Besides that, feel free to experiment with other spices or vegetables, surely you will find your idea way of preparing it.
Ingredients
- 1 cauliflower
- 4 garlic cloves
- Vegetable oil
- 3 small peppers
- 2 small onions
- 1 carrot
- 2 tablespoons of sesame seeds
- 2 tablespoons of soy sauce
- 2 tablespoon of turmenic
- Salt and pepper to taste
- Sesame oil (optional)
Instructions
- The most important thing to remember is that, in order to ensure a rice-like texture, we need to make sure the cauliflower is as dry as possible, removing moisture. Also, it should be very thinly chopped.After washing it, let it dry if you have the time. This will ensure you do not get a “mushy” texture.Afterwards, cut it in small florets and use a food processor to obtain very small pieces, the size of rice grains.Do this in small batches at low power and with short pulses until ready. You can check the desired size in the next picture.
- OPTIONAL: If you can, let the cauliflower dry as long as possible in a recipient to dry it even further.
- When you are ready to prepare the cauliflower rice to eat, cut the rest of the vegetables in small pieces and place them in a pan with some vegetable oil at medium heat.Add the soy sauce so that the vegetables absorb it.
- In the meantime, in a separate pan add some more vegetable oil and start cooking the cauliflower at medium heat. This will allow us to remove more water from its interior.After a few minutes, we add the turmeric and mix very well to get an even colour. Salt the cauliflower to taste.
- When the onion is translucent, add the garlic (very thinly chopped) and the sesame seeds until light brown.Taste the salt level of the vegetables and if needed add either more soy sauce or salt. If you use the former, make sure that it reduces until there is not water left from this ingredient.
- When the sesame seeds and garlic are light brown in one pan and in the other the cauliflower is lightly toasted (like in the picture), we add the vegetables with the sesame seeds to the cauliflower pan and mix very well.Before doing this, it is very important to make sure that the vegetables are not very wet. That is the right moment to mix it all.

Notes
- Try other types of vegetables to go with the cauliflower. This recipe is really good for experimenting and trying different flavours and ingredients.
- Instead of using soy sauce, try adding parmesan cheese for a change. Another option is adding some curry powder to the original recipe we have published.
