Traditional Spanish White Bean Stew (Judiones de la Granja)
If you like legumes, this savoury dish will become your favourite. If you can find La Granja white beans it would be great, otherwise use some other big, buttery kind.

Ingredients
500gwhite beans
80gchorizo
100gunsmoked bacon
80gSpanish black pudding (morcilla)optional
1small onion
4clovesgarlic
1tablespoonSpanish mild paprikaoptional
2leavesbay
olive oil
Instructions
Soak the beans for one day or according to the package instructions.
Once the beans have been soaking for the whole period; add chorizo, bacon, black pudding, the garlic and beans in a pot with a enough water to cover everything.Set the heat to medium-high until it start boiling. Then change the heat to medium and let it cooking for 3.5 h.If in the meantime it runs out of water or starts to boil, add more water.
After those three hours and a half, finely chop the onion and fry in a separate pan with some olive oil at medium heat.Remove the chorizo, black pudding and bacon from the pot and add it to the pan.Mix from time to time.
Once the onion is getting slightly golden, add a tablespoon of Spanish mild paprika (pimentón dulce, optional).Mix very well so that it doesn´t burn and after 2 or 3 minutes, take everything back to the pot and stir.
Let it cook for some additional 10-20 minutes.The beans will be ready once they are tender on the inside.

Notes
- Preferably, it is better to use high-quality white beans for this dish. It will raise the recipe to another level.
