In this simple Penne Alla Vodka recipe, we’ll show you how to prepare a fantastic sauce with tomatoes and cream, with a very intense flavour thanks to the vodka and some crunchy prosciutto on top. All of these ingredients make a delicious sauce for an excellent pasta dish.
Blend the tomatoes in a food processor. You can add a teaspoon of sugar to reduce the acidity.
In a pan at medium heat, add a tablespoon of olive oil and incorporate the prosciutto. Cook it there until it starts to get translucent. Once it is ready, remove it from the pan and reserve for later on a kitchen towel to absorb the oil excess (this will make it crunchy).
In the same pan that you cooked the prosciutto, incorporate the garlic and the chilli flakes. Cook for a few minutes at low heat.
Once the garlic is brown, add 4 tablespoons of vodka.Cook for 2-3 minutes at low heat for removing the alcohol. Warning: If you use a gas kitchen, remove the flame before adding the alcohol.
Add the tomato sauce and some fresh basil leaves. Cook for 5-10 minutes until the sauce is reduced.In the meantime, you can start heating the water for the pasta.
Once the tomato sauce has been reduced, remove the pan from the heat.After a few minutes, when the pan is less warm, add the double cream.
Mix everything until you have a smooth sauce and set aside. Turn the heat on at the lowest setting to keep the sauce warm while cooking the pasta.
Cook the pasta, drain it and incorporate it in the pan with the sauce.Mix and add the prosciutto that you cooked at the beginning. Adjust the level of salt and pepper to taste.
And that’s it! The dish is ready!We normally serve the pasta in a bowl, add some fresh parsley, and parmesan cheese on top!We hope you like it!

You can keep the leftover sauce in the fridge for a few days.
You can add butter to the sauce to make it creamier!
