Simple Asparagus with scrambled eggs and cheese recipe

In this recipe, we’ll learn how to prepare asparagus with scrambled eggs and cheese. The sweetness of the vegetable and the saltiness of the cheese make them a perfect pair, and then the addition of the eggs makes it an ideal dish. A recipe very simple to prepare and with ingredients that you can easily get from any grocery store.
20gof parmesan cheese (or any other that you like)
Salt and Pepper to taste

Instructions
First, you need to trim the asparagus; for that, you want to remove the hardest end of the stalks and keep the tender part.The tip here is to slightly bend it without too much pressure, starting from the opposite part of the head, and keep going up. At some point, the asparagus will break when the hard part ends. Now we slice the tender logs and keep them from later.We could use the hardest bit for a soup or a stock.
Whisk some eggs, and add some salt and pepper to taste.Do not add too much salt, as we’re going to add cheese later!
Put a pan at medium heat and add a teaspoon of olive oil, then incorporate the asparagus. Cover it and let it cook for a few minutes.
In the meantime, grate some cheese. We have used parmesan this time.
When the asparagus are well-cooked (try them to be sure), add a clove of garlic finely chopped.
Finally, once the asparagus and the garlic are cooked, you can incorporate the whisked eggs and grated cheese. Check that the pan is at medium-low heat, and mix all. The cooking time will depend on how cooked you like your scrambled eggs. Just a few minutes will be usually enough for a soft and creamy texture.

If you want to have a tastier dish, try adding bits of chorizo or ham.
Another ingredient that fits perfectly with this recipe is some truffle. You can grate it after plating the dish or use some truffle-infused oil to sauté the asparagus in the pan.
