Homemade tiramisu, an Italian classic
Tiramisú is a fool proof dessert. Elegant and perfect after lunch or tea; it is composed of a luscious cream, some ladyfingers dipped in coffee and topped with cocoa powder. Each layer is different, creating an exquisite mixture of flavours and textures.
Tiramisú
In our recipe we have increased the importance of cocoa, adding some chopped black chocolate between layers that brings a crunchy side. On top of that, we use savoiardi ladyfingers, since they have the perfect consistency to absorb coffee.
Ingredients
- 2 egg whites
- 4 egg yolks
- 60 g sugar
- 250 g mascarpone
- 200 mL coffee
- dark chocolate tablet optional
- cocoa powder to taste
- 12 savoiardi ladyfingers the amount will depend on the recipient you use
Instructions
- Prepare some coffee and let it cool down.To speed up this process, you can pour it on a tray.
- Chop some dark chocolate with a knife (optional).
- Separate the egg yolks and whites in two recipients.
- In a bowl, whip the egg whites into stiff peaks and save for later.
- In another recipient, mix the egg yolks with sugar until the mixture is fluffy and homogeneous.
- Incorporate the mascarpone to the egg yolks mixture and mix until everything is well integrated.Now add the stiff whites and mix folding with a spatula, not whipping.
- Save the mixture for later.
- Submerge some ladyfingers in the coffee very carefully to avoid breaking and place them in a mould.
- Cover the ladyfingers with the eggs and mascarpone mixture.
- Add some chopped chocolate over the cream. This will add some crunchiness (optional).Now we are going to repeat the mounting process once more.
- Add another layer of ladyfingers dipped in coffee.
- Cover with the rest of egg and mascarpone mixture.
- Add some final chopped chocolate on top (optional).
- Sprinkle with cocoa powder to taste.
- Let it rest for at least 3 h in the fridge and… That’s it!
