Today we bring you one fantastic recipe from the Middle East: Mutabal. A delicious spread or dip similar to hummus, as it is made from tahini and olive oil, but in this case, prepared with aubergine rather than chickpeas.

Easiest Mutabal recipe
This simple recipe will teach you how to prepare Mutabal, an amazing dip prepared with aubergine, commonly eaten in the Middle East. You can enjoy this recipe with some bread, pita or however you want! It will be a big success!
Ingredients
- 1 aubergine
- 1/2 onion
- 2 cloves of garlic
- 3 tablespoons of tahini
- 3 tablespoons of Greek yogurt
- Juice of half lemon
- 1/3 cup of olive oil
- 1 tablespoon of toasted cumin seeds
- Freshly chopped parsley
- Salt to taste
- Water (for desired consistency)
- Pomegranate (optional)
Instructions
- Pre-heat the oven to 200°. Make some cuts with a knife on the aubergine skin and put it in the oven.After 20-30 mins, check with a fork if it is ready.You are looking for the fork to go through the skin without any resistance.
- Retire the aubergine from the oven and very carefully remove all the skin, keeping the meat.On a small pan, toast some cumin seeds lightly.
- To make the next step easier, you could cut a little bit the half onion and the two cloves of garlic.
- In a beaker, add the following ingredients:– The meat of the aubergine. – Half onion– 2 cloves of garlic– 3 tablespoons of Greek yoghurt– 3 tablespoons of tahini– Juice of half lemon– 1/3 cup of olive oil– 1 tablespoon of toasted cumin seeds– Salt to taste.Mix everything together until you get an homogeneous paste. If you want it creamier, you can add a little bit of water until you achieve that consistency.
- And that’s it! Your Mutabal is ready!We normally like to plate it with some pomegranate on top, with some freshly chopped parsley.You will love it due to the bitterness of the pomegranate that fits perfectly with the mutabal.We hope you like it!
